Black mustard belongs to the same genus as cabbage and is similar to white mustard but has smaller seeds. The seeds are so small that they are not cultivated as much as other mustard varieties which can be mechanically harvested more efficiently. The spicy component of black mustard seed is called 'isothiocyanate' and it is also found in horseradish and wasabi which belong to the same plant family. The dried seeds have no odor, but release a strong tase if chewed well. The roasted seeds have a nutty flavor and in India they are fried until they pop to flavor the oil.
